Mutton Paya Recipe (Hindi Audio) | Mutton Trotters Recipe

Mutton Paya also known as Mutton Trotters tastes very well when prepared as a soup or gravy and can be eaten as a main course along with Rice or Indian Bread.

Ingredients

For Cooking the Paya (Mutton Trotters)

6 Mutton Paya (Mutton Trotters)

2 tbsp Coriander Seeds

1 tbsp Cumin Seeds (Jeera)

1 tbsp Fennel seeds (saunf)

9-10 Garlic Cloves (Lasun)

1 Medium Onion Sliced

1 tsp Cusus

1 tsp Salt

3 Cinnamon Sticks (Dalchini)

8-10 Cloves (Laung)

1 Star Anise (Chakra Phool)

18-20 Black Pepper (Kaalee Mirch)

3-4 Cassia Leafs (Tej Patta)

1 Black Cardamon (Badee illayachee)

2 Green Cardamon (Haree Illayachee)

For Mutton Paya Gravy

4 Green Cardamon (haree illayachee)

1 black cardamon (badee illayachee)

4-5 black pepper (kaalee mirch)

2-3 Cloves (Laung)

1 Cinnamon Stick (Daalacheenee)

2 tsp Red Chilly Powder

1/2 tsp Garam Masala Powder

1/2 tsp Tumeric Powder

1/2 cup Curd

2 tsp Ginger and Garlic Paste

1 cup Onion Flakes or 2 Fried Onions

1 tsp Salt

For Garnishing

1 Lemon Juice

Little Coriander

Directions

For Cooking the Paya (Mutton Trotters)

1Wash the Mutton Paya / Trotters Nicely and make sure there are no hairs.

2Add the Mutton Paya / Trotters and all the given ingredients into the pressure cooker and add 3 - 4 glass of water. Tip : The Mutton Trotters should be completely submerged in the water.

3Cook the Mutton Trotters and all the ingredients for at least 10 - 12 whistles in the pressure cooker.

4After approx 12 whistles the Mutton Trotters are semi-cooked,

5Now strain the soup and remove the trotters in a bowl or plate.

6Make sure you squeeze the spices (masala) using a strainer nicely.

7Now set this aside and prepare the gravy

For Mutton Paya Gravy

1Only Grind the Onion Flakes and make it a thick paste. (Add very little water)

2Mix all the ingredients prepared for the gravy, in a bowl.

Final Method

1You now have the half cooked Mutton Paya / Trotters, the soup in which it was cooked, and the mixture for the gravy.

2Take another pressure cooker and add 2 teaspoon of Ghee or Oil, Wait till it gets hot and add the Mixture of the gravy and fry it nicely for at least 5 to 7 mins stirring continuously.

3Once the masala is cooked properly add the mutton paya / trotters to the mixture and then mix and cook it together for atleast 7-8 minutes.

4Add the Soup to the pressure cooker and mix it well. And cook it for 8 to 10 whistles.

5After 8 to 10 whistles open the pressure cooker and check if the mutton is cooked nicely.

6Poke the knife in the mutton trotters to check if it is cooked properly. Garnish with coriander and add lime juice.
